Ingredients:

  • 4 medium zucchinis, sliced lengthwise into thin strips
  • 1 pound ground beef
  • 1 cup ricotta cheese
  • 2 cups marinara sauce (sugar-free and low-carb)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1 tablespoon olive oil
  • TWO cloves garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for 1 minute.
  3. Add the ground beef to the skillet and cook until browned, breaking up any clumps with a wooden spoon.
  4. Add the marinara sauce to the skillet and stir to combine with the beef. Reduce the heat to low and let simmer for 5-10 minutes.
  5. In a mixing bowl, combine the ricotta cheese, egg, parmesan cheese, salt, and pepper.
  6. Take a slice of zucchini and spread a tablespoon of the ricotta mixture on one side. Top with a spoonful of the beef and marinara mixture.
  7. Roll up the zucchini slice and place seam-side down in a baking dish(9×13 inch).
  8. Repeat steps 6 and 7 with the remaining zucchini slices and filling.
  9. Top the zucchini rolls with the shredded mozzarella cheese.
  10. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  11. Let it get cool for a few minutes.
  12. Serve!
