Turn the oven on to 350 degrees.
The cheese is microwaved.
Take a bowl and put 1 1/2 cups mozzarella cheese in a bowl. Microwave for SiXTY seconds at a time, stirring in between. On the stovetop, you can alternatively melt cheese over medium heat in a non-stick skillet.
Melted cheese should be added to a food processor. Add the remaining ingredients to create the pizza crust. Pulse ingredients just until a dough ball comes together. If the ingredients aren't completely incorporated, you can knead the dough on the counter until they are, or you can microwave the dough for 30 seconds before pulsing it once more in the food processor.
Place the dough in the pan. Spray a 6.5-inch cast iron skillet, a square baking dish, or a cake pan with cooking spray. Press pizza dough into the bottom and up the sides of the skillet.
On top of the dough, put around half of the remaining cheese .
Layer Pepperoni over cheese.
