This Keto Chicken Dijon is very delicious, tasty, & flavorful. This is a one-pot meal with a rich & indulgent sauce with juicy chicken thigh. We can quickly prepare this chicken Dijon in only thirty minutes. You can serve this Keto Dijon Chicken with cauliflower rice, mash cauliflower with some sautéed asparagus, or green beans for a flavorful and tasty dinner. This dish features simple ingredients like chicken thigh, shallots, wine, Dijon, thyme, heavy cream, oil, salt & pepper, commonly available in the pantry or store. It only contains 0.9g of fiber, & 2.1g of net carbs in them.

INGREDIENTS:

  • 1 tbsp. butter or oil
  • 1 ¼ lb. without bone & skin chicken thighs
  • Salt & pepper
  • 1 medium shallot
  • ½ cup chicken broth
  • ¼ cup Dijon mustard
  • 2 tsp. fresh thyme leaves
  • 1/3 cup heavy whipping cream

INGREDIENTS NOTES:

CHICKEN THIGH:

  • I utilize chicken thighs without bone & skin because they can easily cook in the pan, we can take them with bones also but it requires more time to cook. We can also use chicken breast to make this but you may get the dry chicken.

SHALLOTS:

  • Shallots are added to this recipe because they have a milder flavor than onions & garlic and they meld beautifully with the Dijon.

THYME:

  • I utilize fresh thyme leaves to make this Dijon chicken. You can also use dried thyme for this.

HEAVY CREAM:

  • I utilize heavy cream to make this recipe to thicken the sauce properly; you can also use coconut cream if you want to make this recipe dairy-free.

INSTRUCTION:

  1. Pat dries the chicken with a paper towel to remove any moisture content.
  2. Apply the pepper powder & salt on each side.
  3. Then put the medium skillet on moderate heat and add the butter in the skillet.
  4. Put the thighs(chicken) in the pan & cook them for 5 – 7 mins from each side till they get nicely brown.
  5. When it is done take out the chicken from the skillet and cover the chicken with the aluminum foil.
  6. Just leave 2 tbsp. Oil in the pan and add the shallots in the pan.
  7. Sautee the shallots for like one minute till they get soft.
  8. Include the chicken broth in the skillet allow it to boil and then cook for more 2 minutes till they get reduced to half.
  9. Add the Dijon, & thyme leaves in the skillet and mix with the whisk.
  10. Then add the heavy cream & mix it again with the whisk.
  11. Cook all of them for 2 – 3 minutes or till they get thick according to your preference.
  12. Then transfer the chicken again in the sauce.
  13. Cook the sauce with the chicken for one to two more minutes before we serve the dish.

TIPS:

  • We can adjust the consistency of the sauce according to our preference but don’t make them too thin or too thick sauce. If the sauce becomes too thin then simmer the Dijon sauce for some extra time till it thickens to desire consistency. Add a little amount of chicken broth or cream if you feel that sauce is thick.
    If you want to make the sauce more flavorful then we can add some lemon juice and garlic to make it tastier.
  • Try not to overcook the chicken, if the chicken is overcooked its juices get dry and it becomes dry and chewy.

SERVING IDEAS:

  • Serve this Dijon chicken with a fresh & crispy salad like arugula salad with lemon vinaigrette; it greatly pairs with this salad.
  • You can also serve this Dijon chicken with the cauliflower rice.
  • We can also have some sautéed vegetables like spinach, kale, and asparagus to pair with this Dijon chicken.

  • Put the Dijon chicken in the sealed box & store the box for 5 days.
