All these healthy items assembled to form a satisfying burrito using the keto tortillas. This nutritious burrito is just perfect for a quick breakfast/lunch as it tastes as good from the fridge as fresh. This Keto Steak & Egg Burrito is ideal as it is healthy, storage-friendly, quick, & a satisfying option.

EQUIPMENT:

  • Non-stick skillet or cast iron pan
  • Spatula
  • Knife and cutting board

INGREDIENTS:

  • 6 oz. steak sirloin
  • 4 large eggs
  • 1 tbsp. heavy cream
  • Salt & pepper
  • ½ cup shredded cheddar cheese
  • ½ avocado
  • 2 low-carb tortillas
  • 1 tbsp. butter or oil
  • Optional toppings: hot sauce, salsa, sour cream, chopped cilantro

INGREDIENT NOTES:

OIL/BUTTER:

  • Fats from butter/oil will make our recipe more ketogenic & healthy. We are using here the oil of avocado/butter(without salt).

STEAK:

  • Always make thin slices for this recipe to ensure well & quick tenderness. You may use any of the ribeye, sirloin, or flank steak as per your choice/availability. Here, we’ll be using the sirloin steak.

TOPPINGS(OPTIONAL):

  • To have a variety of flavors, you may use hot sauce/salsa/sour cream/or a combination of these three. Just be careful to check their carb content.

AVOCADO:

  • It contains healthy fats & its paste provides the creamy texture. We suggest you use well-ripened avocados in this recipe

EGGS:

  • Always use eggs that must be fresh, at room temperature, & large for this recipe. If you want the eggs(scrambled) rich & fluffy, go for a tbsp of cream(heavy).

TORTILLAS:

  • Pick the tortillas that contain the lowest amount of carb content(less than five grams).

CHEESE:

  • We are using cheddar cheese in the recipe. You may go for any cheese(mozzarella, cheddar, Monterey Jack, pepper jack, etc.) as per your preference.

INSTRUCTIONS:

INGREDIENTS PREP:

  1. Ignite the stove, keeping a normal to high flame.
  2. Place the skillet over the flame to heat.
  3. Include oil/butter(the one you are using) once your skillet is heated.
  4. Place the steak(slices) in that oil for two/three mins.
  5. Cook them till they start to brown on both sides.
  6. Sprinkle salt & powdered pepper.
  7. Once done, remove them from the flame.
  8. Keep the cooked steak to the side on your working bench.
  9. Now, grab a bowl.
  10. Include cream(heavy) & eggs in it.
  11. Whisk them well.
  12. Reduce the heat from high to normal.
  13. If the skillet needs to be greased, then do it.
  14. Transfer the egg mixture into that greased & heated skillet.
  15. Cook that mixture till it sets & dish it out separately.
  16. Now, heat your skillet & place the tortillas(keto) on it to warm them up.

ASSEMBLING:

  1. Now, starts layering by adding eggs, cheese, steak, & slices of avocado one by one.
  2. Place any extra topping if you want.
  3. Now fold it like a burrito in the proper way.
  4. Place the burritos back in the heated skillet with their open side down.
  5. Heat them till cheese melts & tortillas become crisp.
  6. Your Keto Steak & Egg Burrito is ready to serve!

TIPS:

  • They are friendly to freeze & enjoy meal prep.
  • You can make their spicy version as well by using chipotle mayo/jalapenos.
  • If you are in a hurry, then use the leftover steak from the fridge stock.

STORAGE INFORMATION:

FRIDGE:

  • Use foil to wrap the leftover burritos properly & place them in a container. This way you can enjoy them for upto three days in the fridge.

FREEZER:

  • Wrap them as directed above. This will help you freeze them for thirty days.

REHEATING:

  • If your burritos are in the fridge, then use a skillet/microwave to warm them up. If you want to enjoy the frozen burrito, then defrost it first in the fridge a night before or you can heat it up directly in the oven for twenty mins at 350 degrees F.
