INGREDIENT NOTES:

MEAT:

  • Here we have used the ground beef with 20% fat to achieve juicy results. You can swap the beef with ground meat of chicken, pork, or turkey.

CHEESE FOR CHAFFLE:

  • When we use cheese & eggs to make the low-carb waffles, they are called chaffle. Usually, the Mozzarella or cheddar cheese works well for this. You may use their blend for the unique flavor.

TACO SEASONINGS:

  • If you are using the commercially bought version, then watch out for the label to check if there are any hidden sugars or not. Otherwise, it is best to use a homemade version of taco seasoning, which is so easy to make.

TOPPINGS:

  • We are using all the low-carb toppings here. If you are a strict keto, then you may omit tomatoes & onions as well. Otherwise, we are using them in a very low amount so that the carb content won’t increase.

ALMOND FLOUR:

  • It is not a compulsory ingredient, but it will give your chaffles a bit of stability, which might be beneficial for your dish to be perfect.

  4. Now, use a non-stick spray or oil(apply with a brush) on the waffle iron.
  5. Then, pour half of the batter & shut the waffle maker for around four minutes.
  6. Once you have the golden & crispy waffles, transfer them to a bowl/ramekin.

TIPS:

  • The use of a mini waffle maker will have you the chaffle with perfect crispness & thickness. As the standard waffle maker will give you the soft, thin & too wide chaffles.
  • After chaffles are cooked, they will still be a little bit moist. Place them immediately in the bowl or ramekin will make them acquire the shape of the bowl without breaking. They will firm up upon cooling.
  • Using a little bit of Parmesan & cheddar cheese will enhance the crispiness & flavor of our chaffles
  • Go homemade to have the low-carb version of taco seasoning.
  • Using beef with 20% fat will keep your cooked beef juicy.
  • Instead of adding the taco seasoning directly to the meat, cook it in the oil for thirty secs. This will extract the most flavor.

STORAGE DETAILS:

REFRIGERATION:

  • Store everything separately in a container(sealed), Refrigerate for around four days, and assemble at the time of serving. Try to use the fresh toppings.

FREEEZE:

  • Place the chaffles in the bag(freezer-safe) with paper of parchment in between. Freeze them for around thirty days. Reheat after defrosting using the toaster, air fryer, or oven.
  • Pack the cooked meat in a box(sealed) & freeze for Around ninety days. Use whenever you want to after defrosting & reheating.
  • As directed above, it will be best to use the fresh toppings.

FAQs:

How to mold the chaffles in the shape of a bowl?

  • Place hot chaffle in the bowl/ramekin, they will firm up & acquire the bowl shape as their moisture evaporates.

Is that possible to make it fiber-rich?

  • Yes! Include the flaxseed meal or psyllium husk in the chaffle batter. You can also add fiber through fiber-rich toppings like cabbage(shredded), avocado, etc.

What might be the reason for my chaffles to be moist?

  • The use of cheese with extra moisture might be the reason for having soggy chaffles. The most frequent error we often do is that we place the hot chaffles over one another. This will not let them release their moisture properly. Stack all the chaffles once, and each of them cools down completely.
