Keto Chicken Alfredo Meatballs is very delicious & tasty. They get to indulge in the cheesy Alfredo sauce. These alfredo meatballs are healthy and contain lots of protein, fats, calcium, and iron. This recipe is gluten & grain-free but you can check the label of the pork rinds because sometimes they contain a small quantity of flour otherwise it is completely free. This recipe of Keto Chicken Alfredo Meatballs contains dairy and is not for dairy-intolerant people. You can use dairy-free cheese, coconut cream, & plant base butter to make this recipe dairy-free but it might change the taste slightly. This recipe only contains 5g of net carbs, & 1g of fiber/serving.

INGREDIENTS:

CHICKEN MEATBALLS:

  • 1 Pound Ground Chicken
  • 1 Teaspoon Salt
  • ½ Teaspoon Garlic Powder
  • 0.5 Teaspoon Onion Powder
  • ½ Teaspoon Italian Seasoning
  • ¼ Teaspoon Pepper
  • ¾ Cup Pork rinds
  • ½ Cup Parmesan Cheese
  • One Large Egg
  • Two Tablespoons Olive Oil Shared

ALFREDO SAUCE:

  • ½ Cup Butter
  • 1 & ½ Cups Heavy Whipping Cream
  • 2 teaspoons minced garlic
  • 1/3 Teaspoon Italian Seasoning
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper
  • 2 Cups Parmesan Cheese

INGREDIENTS NOTES:

GROUND CHICKEN:

  • I use little fat-containing ground chicken to get the juicy meatballs but you can also use lean chicken but it may lead to dry meatballs.

PORK RINDS:

  • I use pork rinds as a substitute for breadcrumbs to bind the meatballs; you can also use almond flour breadcrumbs to bind the meatballs.

PARMESAN CHEESE:

  • I add the freshly grated parmesan cheese because it is best to add in the Alfredo sauce and meatballs because it can melt down well. You can also use pre-grated parmesan cheese but it contains an anti-caking agent due to which the cheese will not melt properly.

HEAVY WHIPPING CREAM:

  • I use full-fat heavy cream to make the smooth and indulgent sauce, we can also use low-fat one but it may not be the same creamy as with full-fat cream.

BUTTER:

  • I use butter to prepare this Alfredo sauce.

EGGS:

  • We use the eggs in the meatballs and they also serve as a binding agent to make these meatballs.

OLIVE OIL:

  • I add a little quantity of olive oil to the meatballs and also to brown them.

INSTRUCTION:

TO MAKE THE MEATBALLS:

  1. Take a large bowl and add the pork rinds, parmesan cheese, olive oil, minced chicken, and seasoning.
  2. Mix them well with the spatula till they get fully incorporated.
  3. Apply the little oil in your hands and make around 12 meatballs with the mixture.
  4. We can grab a large skillet and heat it on moderate to high heat.
  5. Put the meatballs in the skillet brown the meatballs from all sides and take it on the plate.

TO MAKE THE ALFREDO SAUCE:

  1. Decrease the heat of the same skillet to low and add the cream & butter in it.
  2. Cook them at low for two minutes.
  3. Then add the Italian seasoning pepper powder, garlic, and salt and mix them with the whisk.
  4. Transfer the cooked meatballs to the skillet cover them with the lid and boil on low flame for ten minutes so that the flavor of both is incorporated into each other.
  5. When the time is completed adds the parmesan cheese along with sauce & meatballs and mix them.
  6. Finally, serve the Keto Chicken Alfredo Meatballs!

TIPS:

  • We can add a pinch of red pepper flakes or cayenne pepper if we want to make the meatballs spicy.
  • You can also utilize beef, or turkey to make this recipe.
