To make Blueberry Donuts, Do I need a Donut Pan?
I recommend you order one, if you do not have a donut pan . I do recommend the investment because having the hole in the center helps the dough to cook evenly though . And once you have a donut pan, just think of all the donuts in your future .
You can make these into mini muffins instead if you really don’t want to buy a mini donut pan .

Ingredients
Donut Ingredients:
- ¼ cup plain Greek yogurt
- 3 tablespoon almond flour
- (or additional almond flour)▢3 tablespoon ground golden flax
- 2 tbsp coconut flour
- 2 tablespoon Joy Filled Eats Sweetener
- TWO tablespoon butter softened
- 1 egg
- 1 teaspoon lemon extract
- ½ teaspoon baking powder
- tiny pinch of salt
- ⅓ cup small frozen blueberries
Cream Cheese Glaze:
- 1 oz cream cheese softened
- 2 tablespoon butter softened
- 2 tablespoon Joy Filled Eats Sweetener
- ½ teaspoon lemon extract
- ½ tablespoon heavy cream/half and half room temperature
Instructions
- Preheat oven to 350.
- For the batter except the blueberries, combine all the ingredients and mix well. Divide between twelve molds(mini donut). Into each donut, press a few blueberries . Small blueberries work best.
- Bake for TWENTY FIVE min. Meanwhile, make the glaze. Combine all the ingredients. Into a piping bag or ziploc bag, put it and cut a tiny part of one corner off.
- Cool the donuts and on a wire rack upside down, put them . Over them, drizzle the glaze. Store in the refrigerator. Before serving to melt the glaze, warm in the oven or the microwave . For thirty seconds, I microwaved mine .
