I recommend you order one, if you do not have a donut pan . I do recommend the investment because having the hole in the center helps the dough to cook evenly though . And once you have a donut pan, just think of all the donuts in your future .

You can make these into mini muffins instead if you really don’t want to buy a mini donut pan .

Ingredients

Donut Ingredients:

  • ¼ cup plain Greek yogurt
  • 3 tablespoon almond flour
  • (or additional almond flour)▢3 tablespoon ground golden flax
  • 2 tbsp coconut flour
  • 2 tablespoon Joy Filled Eats Sweetener
  • TWO tablespoon butter softened
  • 1 egg
  • 1 teaspoon lemon extract
  • ½ teaspoon baking powder
  • tiny pinch of salt
  • ⅓ cup small frozen blueberries

Cream Cheese Glaze:

  • 1 oz cream cheese softened
  • 2 tablespoon butter softened
  • 2 tablespoon Joy Filled Eats Sweetener
  • ½ teaspoon lemon extract
  • ½ tablespoon heavy cream/half and half room temperature

Instructions

  1. Preheat oven to 350.
  2. For the batter except the blueberries, combine all the ingredients and mix well. Divide between twelve molds(mini donut). Into each donut, press a few blueberries . Small blueberries work best.
  3. Bake for TWENTY FIVE min. Meanwhile, make the glaze. Combine all the ingredients. Into a piping bag or ziploc bag, put it and cut a tiny part of one corner off.
  4. Cool the donuts and on a wire rack upside down, put them . Over them, drizzle the glaze. Store in the refrigerator. Before serving to melt the glaze, warm in the oven or the microwave . For thirty seconds, I microwaved mine .
