INGREDIENTS:

  • 1 medium cauliflower
  • 1 tablespoon olive oil
  • 1 head of garlic
  • 1 tablespoon butter
  • 1 small onion
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 ½ cups sharp cheddar cheese
  • Salt and pepper
  • ½ teaspoon dried thyme
  • ¼ teaspoon ground nutmeg
  • Fresh parsley

INSTRUCTION:

  1. Preheat the oven at 400 degrees F.
  2. Put the garlic pieces on the baking sheet and put the garlic in the oven to get roast for 20 to 25 minutes or till they gets tender and attains a nice golden brown color.
  3. When the garlics get roasted put them in the corner to get cool down.
  4. Meanwhile we can take the knife and chopping board and chop the onions and cut the cauliflower into florets.
  5. After that we can add the one tbsp. of olive oil in a large pot and heat-up the olive oil.
  6. Add the cauliflower florets in the pot and saute them for 5 to 7 minutes by stirring them several times when required then add the salt & pepper in the cauliflower.
  7. Then we can add the chopped onions in the pot along with the cauliflower florets.
  8. Saute the onions for an additional 3 to 4 minutes or till the onions gets translucent and tender.
  9. We can transfer the vegetable broth to the pot and bring the broth to simmer.
  10. Then cover the pot with the lid and cook it till the cauliflower gets tender for 10 to 12 minutes.
  11. When garlic pieces gets cool down properly then we can separate the garlic peel from the garlic and put them in the pot.
  12. When the cauliflower florets get tender; use the immersion blender to blend this cauliflower soup.
  13. Add the shredded cheese, thyme, heavy cream, and nutmeg and mix with the spatula till the cheese gets properly melted and soup gets smooth.
  14. We can taste the soup and modify the salt & pepper and other seasoning if required.
  15. Take the ladle and pour the soup in the serving bowl and garnish with the freshly chopped parsley.
