INGREDIENTS:

  • 1 head 12 to 14 pieces of garlic
  • 1 tablespoon olive oil
  • 1 medium onion
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • One bay leaf
  • One teaspoon dried thyme
  • ½ tsp. crushed black pepper
  • Salt
  • ½ cup heavy cream
  • 1 cup grated Gruyere cheese
  • Fresh parsley

INSTRUCTION:

  1. Take a knife and cut the top of the garlic bunch.
  2. Apply the olive oil on the bunch of garlic, then sprinkle some salt & pepper.
  3. Wrap the bunch in the aluminum foil.
  4. Then we can roast the garlic bunch in the oven at 375 degrees F for thirty minutes or till they gets soft and caramelized.
  5. Put the large pot on moderate heat and warm the olive oil in the pot.
  6. Add the onions to the pot and cook them for 5 to 7 minutes or till they get tender and translucent.
  7. We can include the roasted garlic in the pot and cook for the additional 2 to 3 minutes.
