  • If you want to have some unique flavor, use your preferred herb or a mix of two or three herbs. This will get you your personalized flavor.

CAULIFLOWER:

  • Always try to buy fresh cauliflower & convert it into rice by yourself. It will be free from preservatives. If you use the frozen cauliflower rice, you need to strain it well after defrosting.

ALMOND FLOUR:

  • This keto flour will bind the balls well while keeping them low in carbs. You can swap the almond flour with half the amount of coconut flour.

CHEESE:

  • Use any of your preferred low-carb cheeses like sharp/mild cheddar, etc. Here, we are using parmesan cheese for a bold flavor & mozzarella cheese for a nice melt.

INSTRUCTIONS:

  1. Operate the empty oven at 200 degrees C before starting work.
  2. Using a sheet of parchment, cover the baking sheet & set it aside.
  3. Process/grate the cauliflower to make its rice.
  4. Run them in the microwave for around five mins or tender them through the steaming process.
  5. Let them cool off.
  6. Next, lay them out on the towel(clean) & squeeze all of their water.
  7. Your cauliflower rice is ready.
  8. Now, grab a big bowl & include egg, cauliflower, spices, almond flour, cheeses, & herbs.
  9. Mix every item until well combined, then you have the dough, which you can mold into your preferred shape.
  10. Fix a tablespoon/scoop of a particular size to separate a portion.
  11. Shape each portion to make the little balls with your hand.
  12. Then place these balls one by one on the baking sheet(prepared).

BAKING:

  • Transfer the baking sheet with balls to the oven(already-heated).
  • Give total of twenty-five mins to bake them.
  • Turn the balls once half the allotted time has elapsed.
  • Shift the balls to the upper rack & give them two more minutes.

AIR FRYING:

  • Use the air-fryer at 190 degrees C to cook these balls for around fifteen mins.
  • After half the time has passed, shake the balls so, they become crisp from every side properly.
  • Your Keto Cauliflower Balls are ready after cooling down a bit.
  • Serve with your choice of keto dip/sauce.

TIPS:

  • If you want your balls to be extra crispy, then cover them with light oil of olives/avocado.
  • To have the crispy & moisture-free balls, remove all of the water patiently using a kitchen towel(clean), cheese cloth, or a bag of nut milk.
  • You can add whatever add-ons you like to make them uniquely yours, like jalapenos, spinach, or bacon.
  • Fix a particular size of a spoon/cookie scoop to take out the portion from the whole dough every time to make the next ball.
  • This will give you the same size as the whole batch of cauliflower balls.

REHEATING:

  • Use the oven/air fryer to warm them back. If you are rewarming the refrigerated balls, then reheat them at 175 degrees C for seven minutes. but if you are rewarming the frozen balls, then you need to increase the temperature & time as well (at 190 degrees C for twelve mins).

FAQs:

Is there a way to substitute the flour of almond?

  • Sure! The coconut flour can also do a similar job. As it is much more absorbent than almond flour so reduce the amount of coconut flour to half of almond flour.

Will the frozen version of cauliflower rice work well?

  • If you are pressed for time or don’t have fresh cauliflower available for making the rice, then go for frozen cauliflower. But remove their moisture properly before using them. Otherwise, your balls will not be crispy.

What is the other option for cooking these little balls?

  • We have discussed the two options above in our recipe that are baking & air frying. You can also fry them in pans over the flame, which should be normal. Cook them in a little heated oil. Flipping them at intervals to get each side properly crisped.
