Ingredients

(Not nut meal)

  • 3 cups almond flour, blanched
  • 1/2 tsp. baking soda
  • Egg white protein powder, 2 teaspoons
  • Cream of tartar, 1 teaspoon
  • 1/4 tsp. sea salt
  • six eggs
  • TEN grams lemon zest
  • 1/2 tsp. vanilla stevia
  • ONE cup fresh/frozen blueberries

Instructions

  1. Blend(food processor) salt, protein powder(egg white), cream of tartar, almond flour, and baking soda.
  2. Until batter is very smooth, pulse in eggs, lemon zest, and stevia
  3. By hand, stir in blueberries
  4. Into a greased loaf dish(9 x 5 inch), transfer batter.
  5. For 45-55 min, bake at 350°F
  6. Remove from pan after cooling for 2 hours
  7. Serve

Stevia-sweetened keto dessert

I haven’t tried substituting other sweeteners for the stevia in this bread recipe, so I’m not sure how it would turn out.
