INGREDIENTS

  • 1/2 cup butter
  • 1 large egg*
  • 1 teaspoon pure vanilla extract
  • (or coconut sugar if not strict KETO)2 tablespoons brown sugar substitute/sweetener
  • (Swerve Granular or Natvia Baking Blend)**1/4 cup natural granulated sweetener
  • 2 cups almond flour***
  • 1/2 teaspoon sea salt
  • 1/2 cup sugar free chocolate chips (Lily’s Dark Chocolate Premium but for a dairy free option, you can use Enjoy Life chocolate chips )

INSTRUCTIONS

  1. Preheat oven to 350°F . In a 9-inch cast iron skillet, heat the butter over high heat until it gets bubbling. (optional but prevents butter spitting everywhere)Reduce heat down to low; cover pan , and while stirring occasionally, continue to cook until the butter begins to brown. (As the butter may spit, be careful when lifting the lid off the pan .) Remove from heat once browned, and for about FIVE minutes, allow to cool .
  2. Whisk together the egg and vanilla extract, while butter is cooling. Add the sweetener and sugar and until it gets combined, whisk again . Once it has cooled, add the butter and mix well.
  3. Sift in the almond flour (to sift quicker, press any lumps gently over the sieve); add the half the chocolate chips and salt; until the batter is well combined and creamy, mix through gently .
  4. Than cookie dough, it will be a little thicker . Top with remaining chocolate chips and spoon batter into skillet.
  5. Until set on the top, bake for 25-30 minutes when pressed lightly and a toothpick inserted into the centre of the cookie comes out clean.
  6. Serve with No Sugar ice cream.
  7. Frozen yogurt and enjoy!
