Keto Cauliflower Hash Browns

Keto Cauliflower Hash Browns make a great side dish for breakfast or brunch and are a great low carb alternative to traditional hash browns. They are also keto-friendly and the base is just 3 ingredients.
At the start of the year, I always find myself making a lot of cauliflower recipes. When trying to make a low carb version of something, it’s one of my favorite ingredients to use .

Ingredients

  • 3 cups grated cauliflower
  • 1 cup shredded Cheddar cheese
  • 1 large egg
  • ¼ cup real bacon bits
  • 1 tablespoon diced chives
  • ½ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 1 pinch cayenne pepper (Optional)

Directions

  • Step 1
    Preheat the oven to 400 degrees F.
  • Step 2
    In a microwave-safe bowl, place grated cauliflower. On high, heat for Two minutes. Let cool for Five minutes.
  • Step 3
    Squeezing out as much moisture as possible, wring cauliflower in a clean dish towel. To a mixing bowl, transfer cauliflower. Add cayenne, egg, bacon bits, pepper, salt, chives, and Cheddar cheese. Mix well.
  • Step 4
    With cooking spray, spray a baking sheet. Into Six equal portions, divide cauliflower mixture, making sure to leave space between each one. Shape into ovals, and flatten with your hands.
  • Step 5
    About Fifteen minutes, bake in the preheated oven until it gets browned. On low, turn broiler and broil until it gets crispy, about Five minutes. To firm up, let cool for Five minutes.

Cook’s Note:

  • Make your own bacon bits (if desired). Until crisp, pan-fry Four slices of bacon ; crumble into small pieces.
