Soup is one of my favourite foods! Even in the sweltering summer, I could eat a bowl of soup every single day for lunch, but there is nothing quite as comforting as a hot bowl of soup on a frigid winter day.

With its tomatoey richness, this Low Carb Hamburger Soup is one of my all-time favorites, but now I’m sharing a different kind of hamburger soup with you. This creamy and cheesy Keto Cheeseburger Soup is quite thick, almost like a chowder.

This soup is a great way to sneak in additional vegetables without raising any eyebrows—even my kids adore it! I sincerely hope you like this Keto Cheeseburger Soup as much as we do.

Making Simple Cheeseburger Soup

Use a heavy-bottomed pan or dutch oven to fry your bacon.

Cooking the ground beef with butter and setting it aside. There is always the option to omit the butter and use part of the bacon fat that is already in the pan.

Continue to mix the ground beef as it cooks to break up the meat lumps. Assure even browning of the meat.

Add the salt, spices, cream cheese, tomato paste, and yellow mustard after that.

Turn up the heat, add the cream and beef broth or stock, and boil the mixture for a short while.

Add the cheese and stir as the soup begins to boil and bubble. Please take note that using cheese that has not yet been shredded for this recipe will not yield the best results.

The soup will be fully heated and have a creamy, rich texture after simmering for 5-7 minutes.

After adding the bacon back into the soup, give it at least five minutes to rest so that the soup can thicken.

We did not use any flours or starches that would traditionally be used to thicken the soup because it is gluten-free and keto-friendly. If you can wait, the short break will give the cheeses a chance to thicken the soup.

If preferred, top with some chopped pickles.

Ingredients

  • 4 thick-cut pieces of bacon
  • 2 tbsp. unsalted butter
  • 1 lb. of ground beef
  • 4 ounces of softened cream cheese(room temperature)
  • 1.5 tbsp tomato paste
  • 1/9 cup mustard (yellow)
  • 12 teaspoon of garlic powder
  • Smoked paprika, 1/4 teaspoon
  • Salt, 1/4 teaspoon
  • 1/4 teaspoon of pepper
  • 2 cups beef stock or broth
  • Shredded cheddar cheese, 6 ounces
  • heavy whipping cream, 1/4 cup

 

 

Instructions

  1. Make little bacon pieces.
  2. Over medium-high heat, preheat a dutch oven or another heavy-bottomed pan.
  3. Add the bacon and cook it for 5-8 minutes, stirring regularly, until it is browned and crispy.
  4. Remove the bacon to a plate covered with paper towels to drain, and scoop any fat from the pan to be saved for later use (see post above for tips on how to use bacon grease)
  5. Ground meat and butter are added to the pan.
  6. Cook meat while breaking it up as it browns until it is thoroughly done.
  7. Mix pepper, salt, mustard, garlic powder, smoked paprika, tomato paste, and cream cheese.
  8. Add the cream and beef broth, then simmer gently.
  9. Add the cheese and boil for 5-7 minutes, or until completely warmed through and melted.
  10. Re-add the bacon to the pan and cook for 5–10 minutes more to thicken before serving.

The soup is thickened even further by the addition of cauliflower puree, although it would still be delicious without it if you were trying to cut back on carbohydrates. If the soup were made sans cauliflower puree and split into 5 bowls, each bowl would have 4.6 g net carbohydrates.

Warm the cream and add cooking soup. It might shatter if it’s introduced cold, which would make your soup curdle.

This soup is a filling keto cheeseburger soup. Instead of 5, it is easily divided into 6, yielding 6.4 g net carbohydrates per bowl.
