Cream Cheese
This cream cheese danish features a cheesecake-like sweet, creamy filling with the flaky, light pastry texture you love—all without any added sugar! It even has a lovely lemon icing sprinkled on top, giving it true bakery quality. Additionally, we were spared from making fathead dough with mozzarella cheese, which in my opinion belongs nowhere near a sweet pastry.
Although I prefer to have this danish in the morning with a hot cup of coffee, you may enjoy it at any time of day. Bring a double batch to the office potluck, the holiday brunch, or the coffee date with your friends. Or you could easily have more than one or top your keto cheese danish with butter with just 1 gram of net carbohydrates!
Ingredients for keto cream cheese filling
- one egg yolk
- 4 ounces of softened cream cheese
- 3 teaspoons of sugar-free sweetener in powder form
- one-half teaspoon of lemon juice
- a smidge of vanilla extract
Ingredients for keto pastry dough
- 3 eggs, split into yolks and whites
- zero-carb protein powder, TWO tbsp(Unflavored)
- TWO teaspoons of Almond flour,
- 2 ounces of softened cream cheese
- 1 teaspoon sugar substitute
- one-half teaspoon of cream of tartar
Sugar-Free Icing
- 3 teaspoons of sugar-free sweetener in powder form
- one-half teaspoon of lemon juice
- 1 to 2 teaspoons heavy cream for whipping
Instructions
- STEP 1: Prepare the cream cheese filling.
- In a medium bowl, put vanilla, cream cheese, sugar-free sweetener, lemon juice, and egg yolk. Mix until it’s smooth and creamy. Put it apart.
- STEP 2: Divide the eggs.
- Separate the egg whites and yolks. Put each in a small, clean, dry bowl.
- Step 3: Mixture of eggs
- Almond flour, sugar-free sweetener, softened cream cheese, and low-carb protein powder should all be added to the bowl containing the egg yolks. Until smooth, blend with an electric mixer. Set apart.
- Step 4: Meringue creation
- Use a clean, dry electric mixer to combine with the egg whites in the bowl until the mixture becomes frothy. Add the cream of tartar(increase the mixer’s speed to high).
- STEP 5
- Gently blend the egg meringue and yolk mixture by folding them together.
- STEP 6
- On a baking sheet with parchment paper, spoon about 14 cups of batter, separating each scoop by about 1 12 inches. Create a well in the middle of each danish batter with the back of a spoon to accommodate the filling. Put a few teaspoons of the cream cheese filling in the well’s center. 15 to 18 minutes of baking at 325 degrees.
- STEP 7: Add frosting.
- Lemon juice, whipping cream, and powdered sugar are combined to form the icing. The whipping cream should be adjusted to achieve a thin, drizzle-worthy frosting. Sprinkle over the danishes.
