INGREDIENTS

  • 11/3 cups of pure peanut butter
  • 1/2 cup softened salted butter
  • Vanilla extract, 1 teaspoon
  • 3 1/2 cups confectioners’ swerve (if not keto, use powdered sugar)
  • Lily’s semisweet chocolate chips, 3 cups (If keto is not an option, chocolate wafers are the simplest to melt.)
  • Coconut oil, 1 tbsp

INSTRUCTIONS

  1. In a sizable dish or stand mixer, combine the butter, vanilla, and peanut butter. Cream the ingredients for 30 seconds.
  2. Swerve or powdered sugar should be sifted into the basin and then beaten until smooth.
  3. The mixture needs 30 minutes in the fridge to cool.
  4. The peanut butter mixture should be portioned out(medium cookie scoop), rolled into balls.
  5. Place on a baking sheet lined with parchment paper.
  6. In the freezer for 20 to 30 minutes, spread them out on the baking sheet.
  7. The coconut oil and chocolate should be melted in a large glass over a period of time, stirring between each interval of 30 seconds, just before removing the balls from the freezer.
  8. Dip the balls in the melted chocolate. Put the toothpick back in the ball after using a fork to help with the process.
  9. To lightly cover the hole left by the toothpick, use your finger or a paring knife.
  10. Till the chocolate becomes firm, let the mixture rest.

    That’s twenty-five 40 oz jars of peanut butter. Really? Or are the measurements in this recipe in error?
