Ingredients

  • 3 pounds boneless pork loin roast
  • 1 Tablespoon olive oil
  • 1 teaspoon lemon juice
  • One teaspoon of fresh parsley
  • ½ teaspoon minced garlic
  • ground black pepper, to taste

Herb Lemon Aioli

  • ½ cup mayonnaise
  • 2 Tablespoons lemon juice
  • 1 teaspoon minced garlic
  • 2 Tablespoons fresh parsley
  • ground black pepper, to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Whisk together olive oil, lemon juice, parsley, garlic, and black pepper in a small bowl. To brush the mixture onto the pork loin, use a pastry brush.
  3. In the roasting pan, place the seasoned pork. So the entire pork develops a nice brown crust., preferable on a roasting pan with a rack
  4. For 1 hour and 10 minutes, roast the pork, about 20 minutes per pound. The internal temperature(of pork) must be at least 145°F.
  5. The interior of the meat will be slightly pink once the meat has been cooked. Remove from the oven.
  6. Let it rest for FIVE mins before slicing.
  7. Drizzle with the lemon aioli.
  8. Serve.

Herb Lemon Aioli

  1. Make the aioli while the meat cooks.
  2. Whisk together mayonnaise, lemon juice, minced garlic, fresh parsley, and black pepper in a medium bowl. To serve over pork roast, refrigerate until ready.
