- 8 oz cream cheese, softened
- 4 oz unsalted butter, softened
- 1/2 cup chopped fresh strawberries
- 1/4 cup powdered erythritol or other keto-friendly sweetener
- 1 tsp vanilla extract
- 1/4 cup coconut oil
- Optional: additional sliced strawberries for garnish
- In a medium bowl, beat the softened cream cheese and butter together with a hand mixer until smooth and creamy.
- Add the chopped strawberries, powdered erythritol, and vanilla extract to the bowl and beat again until well combined.
- In a small saucepan over low heat, melt the coconut oil until it is liquid.
- Slowly pour the melted coconut oil into the cream cheese mixture, beating continuously until the mixture is smooth.
- Using a small cookie scoop or spoon, portion the mixture into 12 equal-sized balls and place them onto a baking sheet lined with parchment paper.
