Recipe: Low Carb Brownie Bites

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol (or your preferred low-carb sweetener)
  • 1/4 cup melted unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Optional: 1/4 cup sugar-free chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it with non-stick cooking spray.
  2. In a mixing bowl, whisk together the almond flour, unsweetened cocoa powder, erythritol, baking powder, and a pinch of salt. Ensure there are no lumps in the mixture.
  3. In another bowl, beat the eggs. Add the melted butter and vanilla extract. Mix well until the wet ingredients are fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir until you have a smooth brownie batter. If you’d like, fold in the sugar-free chocolate chips at this stage.
  5. Using a spoon or cookie scoop, fill each mini muffin cup with a small amount of the brownie batter, filling them about two-thirds full.
  6. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center of a brownie bite comes out with a few moist crumbs.
  7. Remove the brownie bites from the oven and allow them to cool in the muffin tin for about 10 minutes. Then transfer them to a wire rack to cool completely.
