Keto Oyster Stew. The traditional Christmas or New Year's Eve oyster stew has been transformed into a low-carb version that still has all the delicious tastes you love, but with less carbs and no gluten.
Drain the oysters and save the juice. You can cut up huge oysters into more manageable bite-sized pieces.
Melt butter in a sizable heavy-bottomed pot over medium heat.
Oysters should be added and cooked for 3–4 minutes.
Seasonings are added, followed by white wine, which is simmered.
Add heavy cream, thyme, and the reserved oyster liquor along with 2 cups of water.
Cook for 5 minutes at a simmer while covered.
Take the dish off the fire, take the thyme sprig out, taste it, and season as necessary.
Serve with paprika sprinkled over top for colour.
