Ingredients

  • ▢2 Cups Almond Flour
  • ▢½ Cup Flax Seed Meal
  • ▢1 ½ teaspoon rapid rise yeast
  • ▢½ teaspoon Salt
  • ▢1 teaspoon Baking Soda
  • ▢6 large eggs separated
  • ▢1 teaspoon liquid stevia
  • ▢1 tablespoon apple cider vinegar
  • ▢2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350° and line a loaf pan(9×5-inch) with parchment paper and put it aside.
  2. Take a bowl(large) and whisk together yeast (for flavor, not as a rising agent), flaxseed meal, almond flour, salt, and baking soda in it.
  3. Take another bowl(large) and whisk together the melted butter, stevia, vinegar, and egg yolks.
  4. Until they reach very stiff peaks, in a separate bowl whip the egg whites.
  5. To the dry ingredients, add the egg yolk mixture and mix with a hand mixer until it gets combined. Into the dough, mix ⅓ of the egg whites to loosen the batter. It will still be pretty thick, so fold in the remaining egg whites, as gently as you can until it gets fully incorporated(no streaks of white remain).
  6. Put into the prepared loaf pan and cover with foil. Before removing the foil, bake for 25 minutes and baking for another 25 minutes. Before transferring to a cooling rack to cool let cool slightly completely before slicing.

Notes

Try adding a teaspoon of ground cinnamon for a sweeter bread(pairs very well with the nuttiness of the bread).
