Servings: 16 cookies
- ▢8 oz finely shredded coconut(equal to 2 ½ cups)
- ▢13.5 oz coconut milk(full fat canned)
- ▢2 eggs
- ▢⅓ cup Joy Filled Eats Sweetener
- ▢2 tablespoon coconut flour
- ▢1 cup sugar free chocolate chips
- Preheat oven to 350.
- Until well combined, mix together all the ingredients. Onto 2 cookie sheets, drop 16 scoops, using a large cooking scoop.
- Until the cookies are slightly firm to the touch and the edges are golden, bake for 30 minutes.
- Stirring every 20 seconds, melt the chocolate chips in the microwave. When they are melted(75%), until they finish melting, remove and stir.
- To drizzle on top of the cookies or to coat the bottoms, use the melted chocolate. Turn a cookie upside down in your palm to coat the bottoms and spread the bottom with chocolate.
- On waxed paper, place it chocolate side down.
