Ingredients

  • ▢8 oz finely shredded coconut(equal to 2 ½ cups)
  • ▢13.5 oz coconut milk(full fat canned)
  • ▢2 eggs
  • ▢⅓ cup Joy Filled Eats Sweetener
  • ▢2 tablespoon coconut flour

Topping (optional)

  • ▢1 cup sugar free chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Until well combined, mix together all the ingredients. Onto 2 cookie sheets, drop 16 scoops, using a large cooking scoop.
  3. Until the cookies are slightly firm to the touch and the edges are golden, bake for 30 minutes.

Topping (optional)

  1. Stirring every 20 seconds, melt the chocolate chips in the microwave. When they are melted(75%), until they finish melting, remove and stir.
  2. To drizzle on top of the cookies or to coat the bottoms, use the melted chocolate. Turn a cookie upside down in your palm to coat the bottoms and spread the bottom with chocolate.
  3. On waxed paper, place it chocolate side down.
