Fat Bomb Keto Bars Recipe: Servings: 12 bars

Ingredients:

  • 1 cup almond butter (or any nut butter of your choice)
  • 1/2 cup coconut oil, melted
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup powdered erythritol (or a keto-friendly sweetener of your choice)
  • 1/2 cup chopped nuts (such as almonds, walnuts, or pecans)
  • 1/4 cup shredded coconut (unsweetened)
  • Optional: 1-2 tablespoons chia seeds or flaxseeds

Instructions:

  1. In a mixing bowl, combine the almond butter, melted coconut oil, cocoa powder, vanilla extract, salt, and powdered erythritol. Mix well until smooth.
  2. Fold in the chopped nuts and shredded coconut, along with chia seeds or flaxseeds if using. Stir until evenly distributed.
  3. Line a square or rectangular baking dish with parchment paper, leaving some overhang for easy removal.
  4. Pour the mixture into the lined dish and use a spatula to evenly spread and compact it.
  5. Place the dish in the freezer for about 30-45 minutes, or until the mixture is firm and set.
  6. Once set, remove from the freezer and lift the parchment paper to easily remove the solidified mixture from the dish.
  7. Place the mixture on a cutting board and use a sharp knife to cut it into 12 bars.
