  • 2 large bell peppers
  • 1 lb ground turkey
  • 2 cups shredded cheddar cheese
  • 8 oz tomato sauce
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp olive oil

  1. Preheat the oven to 375F.
  2. With parchment paper, line a baking sheet.
  3. In half lengthwise, cut bell peppers. Discard the stem and scoop out the membranes and seeds.
  4. On microwave-safe plate, put bell pepper halves and for FIVE minutes, microwave on High, or until it gets tender.
  5. In a large frying pan(non-stick), heat olive oil over medium-high heat. Add ground turkey and stirring occasionally, cook, for 5 minutes, or until it gets cooked through. Add 1 1/2 cup shredded cheese, salt, pepper and tomato sauce and mix until it gets combined.
  6. On a baking sheet, put bell pepper halves. Inside the peppers, put the meat mixture. On top, sprinkle the remaining shredded cheese.
  7. In the oven, put stuffed bell pepper halves and bake for FIFTEEN minutes, or until the cheese is melted.
