Keto Cheddar and Herb Instant Pot Quick Bread. To entertain gluten-free guests and hosting meals where everyone feels included, made with keto-friendly ingredients like almond flour, this cheesy, herby bread is your answer. This one is delightfully savory, unlike the classic quick bread recipes you’re most familiar with(for example, think banana bread). From fresh chives and cheddar cheese that melts into the moist, fluffy crumb as it “bakes” in your Instant Pot, the low carb dough gets its signature flavors.

  • 2 cups almond flour
  • (optional, to help bread rise) 1/4 cup unflavored whey protein powder
  • 3 tablespoons chopped fresh chives
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 6 ounces cheddar cheese, grated, divided
  • TWO large Pete and Gerry’s Organic Eggs
  • (divided, melted) 4 1/2 tablespoons unsalted butter
  • 1/3 cup water


Grease a (7″)springform pan well. On the bottom of your Instant Pot, place the trivet and add ONE cup of water.

Whisk together the salt, protein powder, chives, baking powder, and almond flour in a large bowl. Stir in FOUR ounces of the (grated)cheddar.

To the almond flour mixture, add the water, 4 tablespoons of the butter, and the eggs and stir until it gets well combined. Into the prepared pan, spread the batter and smooth the top.

To reduce excess moisture seeping in during cooking, tightly cover the top and the bottom of the pan with foil. Place the pan in the Instant Pot. After closing lid, seal the vent. For FORTY minutes, set on the “cake” setting.

Let the pressure reduce naturally for 15 minutes when cooking is complete, then to allow any additional steam to release, open the vent. Remove the pan carefully(remove the foil).

To high, preheat your broiler and in the middle position, set an oven rack. With the remaining 1/2 tablespoon of butter, brush the top of the bread and sprinkle with the remaining TWO ounces of grated cheddar. So that it’s not too close to the heat, place on the center rack.

Until the cheese is melted and the top is golden, broil bread, THREE to FIVE minutes. Remove and at least FIFTEEN minutes, let cool, then around the inside of the pan, run a sharp knife and before slicing and serving, release the sides.


No Instant Pot? By preparing the batter as directed and transferring to a well greased 8″ x 4″ loaf pan/7″ springform pan, you can make this bread in your oven. Cover the top with foil and for 30-40 minutes, bake at 350F. Preheat the broiler and with the remaining melted butter, brush the top. Sprinkle with cheese and broil until it gets golden.
