INSTRUCTION:
DRY INGREDIENTS:
- Take a bowl (large).
- Add ½ cup of flour (almond), 1 tsp. Of salt, 1 tsp. of ground mustard, ½ tsp.. of black pepper, ½ tsp. of xanthan gum, and ¼ tsp. of cayenne pepper.
- Mix it with the whisk properly.

FOLD THEM TOGETHER:
- Add the egg whites in batches in the almond flour and cheese mixture and fold it till well mixed.
BAKE THE SOUFFLE:
- Apply oil on 8 ramekins.
- Divide the soufflé mixture equally in the 8 greased ramekins.
- Place them on a cookie sheet.
- Carefully lift the sheet put it in the oven and bake it for 25 mints at three-fifty degrees F till it gets a nice golden brown color.

TIPS:
- Always use a clean, free-of-dirt, and moisture-free bowl to fluff up the egg white. Also, make sure egg yolks are separated properly from the egg whites; because if there is a little moisture or fat content, or a bit of egg yolk it cannot be fluffed up the way it has to be fluffed.
