INGREDIENTS:

  • ½ cup of almond flour
  • 1 tsp. of salt
  • 1 tsp. ground mustard
  • ½ tsp. black pepper
  • ½ tsp. xanthan gum
  • ¼ tsp. cayenne pepper
  • ½ cup unflavored almond milk
  • ¼ cup heavy cream2 cups sharp cheddar cheese (shredded)
  • ¼ cup chopped chives
  • 6 large eggs (at room temperature)
  • ¼ tsp. cream of tartar
  • Pinch of salt

INGREDIENT NOTES:

ALMOND FLOUR:

  • Utilizing great quality almond flour is critical for these keto soufflés. Exceptionally milled flour will give them a greatly enriched stability.

XANTHAN GUM:

  • Xanthan gum is used to bind and thicken the batter, so it will rise in a good way.

CREAM AND ALMOND MILK:

INSTRUCTION:

DRY INGREDIENTS:

  1. Take a bowl (large).
  2. Add ½ cup of flour (almond), 1 tsp. Of salt, 1 tsp. of ground mustard, ½ tsp.. of black pepper, ½ tsp. of xanthan gum, and ¼ tsp. of cayenne pepper.
  3. Mix it with the whisk properly.

WET INGREDIENTS:

  1. In the same bowl add ¼ cup heavy cream and ½ cup almond milk and mix them together.
  2. Then add the 2 cups of sharp cheddar, ¼ cup chopped chives, and 6 large eggs and properly mix them to combine together.

WHIP THE EGG WHITES:

  1. Separate the 6 eggs egg white and yolks.
  2. Take a different vessel and include the egg white, ¼ tsp. of cream of tartar, pinch of salt and beat them until they form stiff peaks and the mixture looks shiny.

FOLD THEM TOGETHER:

  1. Add the egg whites in batches in the almond flour and cheese mixture and fold it till well mixed.

BAKE THE SOUFFLE:

  1. Apply oil on 8 ramekins.
  2. Divide the soufflé mixture equally in the 8 greased ramekins.
  3. Place them on a cookie sheet.
  4. Carefully lift the sheet put it in the oven and bake it for 25 mints at three-fifty degrees F till it gets a nice golden brown color.
  5. Your Keto Cheese Soufflés are ready now.
  6. Serves them right after they are baked.

TIPS:

  • Always use a clean, free-of-dirt, and moisture-free bowl to fluff up the egg white. Also, make sure egg yolks are separated properly from the egg whites; because if there is a little moisture or fat content, or a bit of egg yolk it cannot be fluffed up the way it has to be fluffed.
  • This recipe will make 8 servings; you can easily split it in half and make only four.
  • You can also make this in a big soufflé dish.
