  • 1 medium head of cauliflower
  • 4 slices of bacon, diced
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 cup shredded cheddar cheese
  • ¼ cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. Prepare the cauliflower by removing the leaves and cutting it into florets. Rinse the florets under running water and pat them dry with a paper towel.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice-like grains. Be careful not to over-process, as it can turn mushy. Set aside.
