It’s Tasty. By far my favorite coleslaw. Between salt and sweet, soft and crunchy, it’s the right balance. The little extra oomph is added by the bacon and pickles. It is so good that no one will know it’s healthy.
So Healthy! This coleslaw is keto, low carb,gluten-free, and has no added sugar.

There are 4 grams of sugar. It comes from the red cabbage. Than green cabbage, red cabbage is sweeter. Feel free to use all green cabbage instead if this is a concern.
This is a great keto coleslaw recipe option with 13.2 grams of fat, 1.3 grams of protein, and 5.6 net carbs!

Keto Coleslaw Dressing

Mayonnaise – I used an avocado oil mayo (I used Sir Kensington Avocado Oil Mayo) for test purposes , but as long as it’s keto, you can use your favorite!
Sugar Substitute – I just used Swerve for this coleslaw but any 1:1 sugar substitute will be fine!
Cider Vinegar
Pickle Juice
Dijon Mustard

INGREDIENTS

Keto Coleslaw Dressing

¾ cup mayonnaise(we prefer Sir Kensington Avocado Oil Mayo)
1 tablespoon Swerve sugar substitute Or regular sugar
1 tablespoon cider vinegar
ONE tablespoon pickle juice
1 teaspoon dijon mustard

Coleslaw

▢8 ounces red cabbage thinly sliced/shredded
▢8 ounces green cabbage thinly sliced/shredded
▢9 bacon slices cooked and crumbled
▢2 stalks celery chopped
▢⅓ cup dill pickles chopped
▢Salt and pepper to taste

INSTRUCTIONS

  1. In a small bowl, mix all the coleslaw dressing ingredients together.
  2. Add cabbage, celery, and pickles in a large bowl.
  3. To coleslaw salad, add dressing. Add bacon. Until it gets well incorporated, toss all ingredients.
  4. At least 1 hour up to 8 hours, cover and refrigerate.
  5. (if needed)Season with salt and pepper.
  6. Enjoy!

NOTES

Refrigerate longer or add 1/4 cup more mayonnaise for a creamier coleslaw. Less time, for crisper coleslaw refrigerate.
Until all ingredients are tossed together, do not add salt or pepper. Pickle, mayonnaise, and bacon juice all have varying amounts seasoning and salt . Seasoning accordingly, adjust salt and pepper.
