Keto Greek Lemon Chicken

Greek Lemon Marinade

  • ¼ cup olive oil
  • Zest of one lemon
  • ¼ cup fresh lemon juice
  • 4 cloves garlic minced
  • 1 ½ teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon dried basil
  • ½ teaspoon marjoram
  • ⅛ teaspoon nutmeg
  • ½ teaspoon dried parsley

Sheet Pan Chicken

  • (cut into 1 to 2 inch pieces) 4 cups cauliflower florets
  • 1 medium zucchini sliced ¼ inch thick
  • (skin on) 6 medium chicken thighs bone in,
  • ¼ cup crumbled feta
  • Salt and pepper
  • ¼ cup small olives
  • ¼ cup chopped tomato


Greek Lemon Marinade

  1. Whisk together the nutmeg, lemon zest, lemon juice, garlic, salt, pepper, parsley, basil, marjoram, and olive oil in a bowl(medium).

Sheet Pan Chicken

  1. Preheat the oven to 400ºF. On a large rimmed sheet pan, spread the cauliflower and zucchini out. Drizzle with half of marinade and toss to combined.
  2. On top of the vegetable, place the chicken, evenly space apart. Sprinkle with pepper and salt.
  3. Over the chicken, spoon the remaining marinade and spread over each thigh to coat. Until the skin of the chicken is golden brown, bake 30 to 35 minutes.
  4. Over the pan, sprinkle the olives, feta, and chopped tomato and bake FIVE more minutes.
