INGREDIENTS
For the Dough:
- 1 ½ cups mozzarella cheese
- Cream cheese, two tablespoons
- ¾ cup flour(almond )
- 1 large egg
For the Filling:
- 6 slices of ham
- ¾ cup shredded cheddar cheese
- 1 tbsp. Dijon mustard
- 1 egg
INGREDIENT NOTES:
KETO FLOUR:
- If you want the smooth textured dough then, never use almond meal. It will make your dough grainy. Always go for finely ground flour of skinless almonds.
CHEESE FOR DOUGH (MOZZARELLA & CREAM CHEESE):
- If you are very strict on the low-carb diet then you must have to avoid buying the of already shredded version. These pre-shredded versions contain additional starches to hold the shape of that cheese. It is always better to buy a block & grate it by yourself. We are using here the mozzarella cheese as it give the required stretch to our dough.
- When we mix cream cheese with mozzarella, our dough will be more creamy & supports better blending.
DIJON MUSTARD:
- It will contrast perfectly with ham & cheese, but add a little amount so the pockets will not get moist. You are going to use Dijon mustard or not according to your preference.
CHEESE FOR FILLING (CHEDDAR):
- Ham will pair perfectly with the cheddar cheese(sharp). You may also combine it with any of your favorite cheeses to have a personalized flavor.
HAM:
- Slice or chop the ham (deli or any leftover baked) to use as a filling. Being strict on keto, avoid any sweetly marinated ham.
EGGS:
- We are using two eggs here for two different purposes:
We will use the first egg while making the dough to bind it well.
Another egg will be beaten & then brushed to coat the pockets for the final finish.

INSTRUCTIONS:
- Switch the oven on & heat it empty at 375 degrees F.
- Using parchment paper, prepare a baking pan.
DOUGH MAKING:
- Place a bowl(microwave-safe) on your working table.
- Include the cheeses (cream & mozzarella) in that bowl.
- Transfer that bowl to the microwave.
- Run the microwave for around sixty/ninety secs.
- Transfer that bowl back to the working table once you see the cheeses have been melted.
- Mix both the cheeses till they combine well.
- Now, include flour(almond) & egg to that cheese mixture.
- Mix them & knead till you get a smooth dough.
- Place the dough between sheets(parchment).
- Flatten the dough ball in the shape of a rectangle(must be 0.25 inch thick).
- After the dough is fully rolled, cut it into six equal rectangles.
ASSEMBLING:
- If you are using the mustard(dijon), then spread a thin layer of it on each rectangle.
- Place the ham & cheddar(grated) on half of the rectangle.
- Fold the empty half over the filling.
- Seal the edges by pressing them using the fork.
- Now, beat a single egg in a little bowl.
- Apply the beaten egg using a silicone brush over the top of the pockets.
- Arrange these pockets on the lined baking sheet at an equal distance.
- Transfer that baking sheet to the oven(already heated).
- Give them the time till they acquire your favorite color(golden-brown).
- It will take around 18/20 minutes.
- Once they get ready, shift them from the oven to the cooling wire rack.

- Keep the dough in the freezer for some time, the cheese will become solid & make the dough easier for you to handle.
