INGREDIENTS

For the Dough:

  • 1 ½ cups mozzarella cheese
  • Cream cheese, two tablespoons
  • ¾ cup flour(almond )
  • 1 large egg

For the Filling:

  • 6 slices of ham
  • ¾ cup shredded cheddar cheese
  • 1 tbsp. Dijon mustard
  • 1 egg

INGREDIENT NOTES:

KETO FLOUR:

  • If you want the smooth textured dough then, never use almond meal. It will make your dough grainy. Always go for finely ground flour of skinless almonds.

CHEESE FOR DOUGH (MOZZARELLA & CREAM CHEESE):

  • If you are very strict on the low-carb diet then you must have to avoid buying the of already shredded version. These pre-shredded versions contain additional starches to hold the shape of that cheese. It is always better to buy a block & grate it by yourself. We are using here the mozzarella cheese as it give the required stretch to our dough.
  • When we mix cream cheese with mozzarella, our dough will be more creamy & supports better blending.

DIJON MUSTARD:

  • It will contrast perfectly with ham & cheese, but add a little amount so the pockets will not get moist. You are going to use Dijon mustard or not according to your preference.

CHEESE FOR FILLING (CHEDDAR):

  • Ham will pair perfectly with the cheddar cheese(sharp). You may also combine it with any of your favorite cheeses to have a personalized flavor.

HAM:

  • Slice or chop the ham (deli or any leftover baked) to use as a filling. Being strict on keto, avoid any sweetly marinated ham.

EGGS:

  • We are using two eggs here for two different purposes:
    We will use the first egg while making the dough to bind it well.
    Another egg will be beaten & then brushed to coat the pockets for the final finish.

INSTRUCTIONS:

  1. Switch the oven on & heat it empty at 375 degrees F.
  2. Using parchment paper, prepare a baking pan.

DOUGH MAKING:

  1. Place a bowl(microwave-safe) on your working table.
  2. Include the cheeses (cream & mozzarella) in that bowl.
  3. Transfer that bowl to the microwave.
  4. Run the microwave for around sixty/ninety secs.
  5. Transfer that bowl back to the working table once you see the cheeses have been melted.
  6. Mix both the cheeses till they combine well.
  7. Now, include flour(almond) & egg to that cheese mixture.
  8. Mix them & knead till you get a smooth dough.
  9. Place the dough between sheets(parchment).
  10. Flatten the dough ball in the shape of a rectangle(must be 0.25 inch thick).
  11. After the dough is fully rolled, cut it into six equal rectangles.

ASSEMBLING:

  1. If you are using the mustard(dijon), then spread a thin layer of it on each rectangle.
  2. Place the ham & cheddar(grated) on half of the rectangle.
  3. Fold the empty half over the filling.
  4. Seal the edges by pressing them using the fork.
  5. Now, beat a single egg in a little bowl.
  6. Apply the beaten egg using a silicone brush over the top of the pockets.
  7. Arrange these pockets on the lined baking sheet at an equal distance.
  8. Transfer that baking sheet to the oven(already heated).
  9. Give them the time till they acquire your favorite color(golden-brown).
  10. It will take around 18/20 minutes.
  11. Once they get ready, shift them from the oven to the cooling wire rack.
  12. Serve these yummy Ham & Cheese Puff Pastry Pockets once they reach a normal temperature.

TIPS:

  • Keep the dough in the freezer for some time, the cheese will become solid & make the dough easier for you to handle.
  • Another solution for easy dough handling is that apply a thin layer of oil to cover your hands.
  • Seal the edges of these pockets carefully to avoid the leakage of cheese.
  • You may include jalapenos, spinach, or any veggie of your choice for the variation in flavors.

STORAGE INFORMATION:

FRIDGE:

  • Pack these pockets(once cooled) in a container with having sealed lid. This is how you can use these pockets freshly in the fridge for up to four days.

FREEZER:

  • Once the pockets attain normal temperature, wrap each of them properly using foil/cling wrap. After that, pack these pockets in a bag (freezer-safe).
    This packing lets you store them for sixty/seventy days in the freezer.

REHEATING:

  • Use the oven/toaster to reheat these pockets at the time of serving. There is no need to thaw these pockets before reheating. The frozen pockets will take 15/20 minutes at 375°F(in the oven).

  • Cheeses are the base of the fat-head dough. Go for the dairy-free alternatives if you are non-dairy. The cheeses we get from nuts will be dairy-free and best for vegans & lactose-intolerant people.

  • Yes, you may prepare these pockets the night before, cover & shift them to the fridge for the whole night. They will be best when you bake them the next morning.
