INGREDIENTS:

  • 2 pounds of Beef ribs
  • 2 pounds Flank steak
  • 4 Chorizo sausages
  • 2 pounds Short ribs
  • Chicken thighs (optional)
  • Salt & pepper

FOR CHIMICHURRI SAUCE:

  • ½ cup fresh & chopped parsley
  • ¼ cup red wine vinegar
  • 2 pieces garlic
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • ½ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

INSTRUCTION:

MAKE THE CHIMICHURRI SAUCE:

  1. Take a small bowl and add the crushed garlic, red pepper flakes, chopped parsley, & oregano.
  2. Add the salt & pepper, olive oil, & vinegar in the same bowl and mix them with the whisk or spoon.
  3. Then taste the sauce adjust the seasoning if required.
  4. Put it aside for 3 to 4 hours so that the flavor develops perfectly.

PREPARE THE GRILL:

  1. We can set the wood or charcoal grill by creating a slow and indirect heat zone so that the meat cooks slowly and perfectly

  4. Make one side hotter for searing the meat and make the other side somewhat cooler to cook the meat.

SEASON THE MEAT:

  8. Now in the last, we grill the chicken on medium heat for about 45 minutes.
  9. Flip them occasionally after every 15 minutes till they cook perfectly.
  10. The cooking time of chicken also depends upon the part of the chicken and its size so check it occasionally to ensure that it is cooked properly.

SERVE:

  1. When everything is cooked perfectly then slice the flank steak against the grain, and you can also slice the chorizo sausages if you want.
  2. Then arrange everything neatly on the large platter and then drizzle the chimichurri sauce over the served meat and also put the sauce on the side for dipping.

TIPS:

  • You can marinate the beef ribs and flank steak in the chimichurri sauce for one to two hours before we cook them to make them more flavorful.
  • We can keep the grill temperature consistent and not increase or decrease the temperature to avoid the uneven cooking of the meat.
