Easy Keto Truffles

EASY KETO TRUFFLES. Wonderfully chocolaty and decadent. They are surprisingly easy to make at home, made with just four ingredients.

In just under an hour, they are ready, and for several days, they keep well in the fridge.

By far my favorite indulgence. So I was on the lookout for a good reliable keto alternative when my husband and I started eating a low-carb diet. These are perfect! You won’t miss the sugar!

EXPERT TIP

When making these truffles, the only somewhat challenging part is shaping them. This is quite messy, so I highly recommend that when performing this task, you wear disposable gloves.

To wash your hands and get rid of the chocolate, it’s not that it’s difficult, but it does tend to get under your nails.

What are truffles?

A type of chocolate candy. They are coated with chocolate or cocoa powder and made from the chocolate ganache. Their resemblance to the edible fungi is where their name comes from.

Should I make them perfectly round?

Absolutely not! That they are slightly misshapen so they are not supposed to be perfectly round and part of their charm.

 

SERVING SUGGESTIONS

Wonderful all on their own. Sometimes I make a big platter of cheeses, strawberries, and these truffles when I host. It’s very tasty and gorgeous.

INGREDIENTS

  • 3 oz dark chocolate 85% cacao
  • 1 tablespoon unsalted butter
  • ¼ cup heavy cream
  • 1 teaspoon stevia glycerite
  • 3 tablespoons unsweetened cocoa powder

INSTRUCTIONS

  1. With a sharp chef’s knife, coarsely chop the chocolate. Or use chocolate chips. In a shallow bowl, place the butter and chocolate. Stirring after each session, microwave in two THIRTY-second sessions, until the chocolate is almost melted.
  2. Stir in the heavy cream. For TWENTY additional seconds, microwave, then with a rubber spatula, stir the mixture until it turns into a smooth ganache. At this point, you can stir in a bit of stevia if you’d like.
  3. With a plastic wrap, cover the mixture and freeze for THIRTY minutes.
  4. Use disposable gloves: Measuring about ONE tbsp per truffle, scoop out small portions of the mixture. With your hands, shape the truffles into balls. They won’t be perfectly round.
  5. In the cocoa powder, roll the truffles to coat. They’re ready! Enjoy.
