Here’s the recipe for Keto Cheesy Bacon Cauliflower Rice:

Ingredients:

  • 1 medium head of cauliflower
  • 4 slices of bacon, diced
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 cup shredded cheddar cheese
  • ¼ cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the cauliflower by removing the leaves and cutting it into florets. Rinse the florets under running water and pat them dry with a paper towel.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice-like grains. Be careful not to over-process, as it can turn mushy. Set aside.
  3. In a large skillet or frying pan, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside on a plate lined with a paper towel.
  4. In the same pan with the bacon fat, add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  5. Add the cauliflower rice to the pan and stir to combine with the onion and garlic. Cook for about 5-7 minutes until the cauliflower rice is tender but still has a slight crunch.
  6. Reduce the heat to low and stir in the shredded cheddar cheese and heavy cream. Continue stirring until the cheese has melted and coated the cauliflower rice evenly.
  7. Season with salt and pepper to taste. Remember that the bacon already adds saltiness, so adjust accordingly.
  8. Remove from heat and sprinkle the cooked bacon over the cauliflower rice. Garnish with fresh parsley, if desired.
  9. Serve the Keto Cheesy Bacon Cauliflower Rice as a side dish or enjoy it as a satisfying main course.
