To combine bacon and avocado, bacon basket is an ingenious way. Like a fat bomb, they work as an appetizer.

This recipe looks great and is crispy. Making it is a little laborious but the result is worth it. With chicken, we combine our baskets, but you can use ground beef/even crushed hard-boiled eggs.

Equipment

Aluminum foil and cupcakes tray

Ingredients

(cut into small strips) 12 slices bacon thick,
1 cup avocado chopped in squares
¼ cup onion finely chopped
½ cup sour cream
1 cup chicken cooked and shredded
1 tbsp lemon juice
Salt and pepper to taste
1 tsp smoked paprika
1 tbsp coriander finely chopped

Instructions

You will need a tray of cupcake tins and aluminum foil to make the baskets. Into SIX pieces of similar size, cut the aluminum foil. Upside down, turn the cupcake mold. Cover with aluminum foil on the convex side.
In half, cut the stripes of bacon and with three strips, cover each mold and try to form a basket. For TWENTY minutes, bake at low heat (about 250°F).
Meanwhile, mash the avocado in a medium bowl. Add sour cream, onion, lemon juice and cooked chicken, then add the rest of the ingredients after mixing well. Add salt and pepper.
From the oven, remove the tray. Let cool and unmold the baskets. On a plate, place the baskets and fill with the avocado and chicken mixture. On top, you can place some coriander.
