Ingredients:

  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1 large egg
  • 2 tablespoons cold water
For the Filling:
  • 1 pound ground beef
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder (adjust to taste)
  • Salt and black pepper to taste
  • 1/4 cup pitted green olives, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 egg, beaten (for egg wash)

Instructions:

Preparing the Dough:
  1. In a large mixing bowl, combine the almond flour, coconut flour, xanthan gum, salt, and garlic powder.
  2. Add the cold butter pieces to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  3. In a small bowl, beat the egg and cold water together. Pour this mixture into the dry ingredients and stir until it forms a cohesive dough. If needed, add a bit more water, one tablespoon at a time.
