KETO BLUEBERRY CRUMB LOAF (GLUTEN FREE)

KETO BLUEBERRY CRUMB LOAF (GLUTEN FREE) is a moist and delicious coffee cake loaf with a cinnamon streusel crumb topping and baked with fresh blueberries!

Crumb topping is super delicious!

Since Keto, I’ve had to get creative in what I use in place of brown sugar and flour.

Thanks to the Oat Fiber that I use, the texture is absolutely perfect. Without adding carbs adds a very cake-like texture, just plenty of fiber! But, brands matter with Oat Fiber.

  • Super fine almond flour
  • Oat Fiber
  • Swerve Confectioners
  • Brown Swerve
  • Blueberries
  • Eggs
  • Sour cream
  • Heavy cream
  • Grass-fed butter
  • Baking powder
  • Vanilla extract
  • Lemon
  • Walnuts
  • Ground cinnamon
  • Ground nutmeg
  • Salt

INGREDIENTS

For the Loaf

  • ▢1 ¾ cups super fine almond flour
  • ▢¼ cup Oat Fiber , see notes
  • ▢⅔ cup blueberries
  • ▢3 eggs
  • ▢½ cup sour cream
  • ▢¼ cup heavy cream
  • ▢½ cup swerve confectioners
  • ▢2 teaspoons baking powder
  • ▢1 ½ teaspoons vanilla extract
  • ▢zest of 1 lemon
  • ▢Pinch of salt

For the Crumb Topping

  • ▢⅔ cup super fine almond flour
  • ▢3 tablespoons walnuts, chopped
  • ▢3 tablespoons grass fed butter, melted
  • ▢¼ teaspoon ground cinnamon
  • ▢¼ cup Brown Swerve
  • ▢⅛ teaspoon ground nutmeg

INSTRUCTIONS

  1. Preheat oven to 325F.
  2. For the crumb topping, add all the ingredients to a bowl, except the butter and mix together.
  3. Pour in the melted butter and mix until it gets well combined, then put it aside.
  4. Add the salt, baking powder, oat fiber and flour to a bowl and whisk together, then put it aside.
  5. Except the blueberries, then add all the remaining ingredients, to a mixing bowl(large) and mix using a hand mixer for about Thirty seconds. Add in the dry ingredients and continue mixing.
  6. Fold in the blueberries gently, then pour into a nonstick loaf pan(9″ x 5″) that’s been sprayed with nonstick spray (prefer coconut oil spray). I would line it with parchment paper, if your pan isn’t nonstick. Using your spatula smooth the top and top with the reserved crumb topping.
  7. Bake for Forty Five to Fifty minutes or until when inserted a toothpick, comes out clean.
