  • 3 cups shredded mozzarella cheese
  • 4 ounces cream cheese
  • 2 eggs
  • 2 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup buttermilk / (plain low carb yogurt)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt


  1. STEP 1

Preheat oven to 400 degrees.

  1. Melt the cheese

Take a glass bowl(small) add shredded cream cheese and mozzarella cheese. Microwave at One min intervals until the cream cheese has softened and cheese is melted. Melt the shredded cheese over the stovetop in a non-stick skillet if you don’t want to use a microwave and use softened cream cheese.

Add melted cheeses and remaining ingredients to a food processor. Pulse until it gets well combined. Using an electric mixer, you may also combine the ingredients; using a food processor, dough comes together evenly and faster.

  1. Create dough balls

In order to handle the dough, wet your hands with some oil or water. This won’t allow dough from sticking to your hands. Make a ball shaped dough and place on a parchment lined baking tray. Continue with remaining. Larger than 2.5 inches wide(require longer cooking times). Spacing about 1 inch apart, evenly place dough balls on the tray.

  1. Bake the rolls

Bake at 400 degrees F for 13-18 minutes until slightly firm on the inside and hardened on the outside. Before eating, let cool for 3-5 minutes.
