To counterbalance the sweetness of the sweetened version—which tasted, to be honest, a little bland added raw apple cider vinegar. That was the cherry on top, as everything worked incredibly well.

  • Sea salt: 1/2 teaspoon.
  • Extra virgin olive oil: 2 tbsp.
  • Brown sugar: 1/4 cup.

Instructions:

  1. Slice the onions as thinly as possible after peeling them.
  2. Raise the heat to high in a skillet. Add the sugar, chopped onions, and olive oil. Blend until thoroughly blended.
  3. Lower the temperature to a minimum. Cook for 40 to 50 minutes, covered, or until soft, sticky, and jam-like. As it cooks, stir once every five to ten minutes.

Notes:
  • This recipe calls for erythritol as a brown sugar substitute, but if you’re against additional sweetness or sweeteners of any kind, you may omit the sweetener completely. Long-cooked red onions release their natural sweetness, so this condiment can have just a trace of sweetness without the need for sweeteners. But since I wanted this recipe to be sweet, I’m adding Skin Gold, my favorite sweetener.
