KETO CHEESE FONDUE

KETO CHEESE FONDUE. My boyfriend and I had our date night, a couple of weeks ago so we decided to make a super yummy cheese fondue and spice things up a bit! At first, Because I used to always make it with cornstarch so I wasn’t sure how I would make it. You’ll know that the cheese and the alcohol tends to separate from one another if you’ve ever made a cheese fondue and won’t stick to each other so to make everything stick together, you usually need to add cornstarch to the pot.

To see if it would work, I decided on a whim to try and put xanthan gum in it, and while continuing mixing the whole thing, I started adding ¼ tsp at a time. The cheese and alcohol finally came together after about 1.5 tsp, and it was a huge success!!!! Because I honestly didn’t feel like wasting that much cheese, I was so glad, especially since it’s so expensive and non-existent in Japan. We chose to eat it with some different veggies and different cuts of meat/seafood for the fondue. I just needed to dip whatever I wanted in the cheese and boiled/grilled everything beforehand!

INGREDIENTS

  • ▢150 g beaufort (grated)
  • ▢150 g gruyere (grated)
  • ▢250 g comte (grated)
  • ▢250 ml sauvignon blanc
  • ▢1 clove garlic
  • ▢1-1.5 tsp xanthan gum

  • low carb bread, sausages, shrimp, broccoli, bell peppers, lotus root, asparagus, mushrooms, zucchini, grilled chicken, bacon, cauliflower, cherry tomatoes

INSTRUCTIONS

  1. Add your garlic clove and white wine in a fondue pot. Until the wine is simmering, put on medium heat.
  2. Into the wine, slowly add a bit of the cheeses while mixing with a silicone spatula. Make sure you only add a bit at a time and once the previous cheese has melted, only add more cheese.
  3. You’ll notice that the cheese and alcohol won’t mix together once all of the cheese has been added. Add ONE tablespoon of xanthan gum and always continue whisking. The alcohol and cheese will slowly mix together and the cheese fondue should slowly start to thicken. Just add ¼ tsp of xanthan gum more at a time if it still hasn’t mixed together, until it does. I used 1.5 tsp(it was the perfect consistency).
  4. Turn the heat to low once the fondue is all mixed together, and start dipping your ingredients inside the yummy cheese!

NOTES

  • Like Emmental and Swiss, try out different cheeses for different flavours!
