Keto Gorgonzola Vinaigrette. Takes minutes to make but packs quite the flavor punch! Variations

Change up the type of vinegar – For this recipe, most vinegar will work fine. Using a white wine vinegar/champagne vinegar would be great as well.

Use a different oil – Extra virgin olive oil and Liquid coconut oil would be great choices.

Mustard – Add a teaspoon or two of dijon mustard for a bit more zing .

Add a bit of lemon juice -By adding some lemon juice or lemon zest, kick up the citrus flavor.

Sweetness – I recommend adding a tablespoon of brown sugar sweetener if you want the dressing a little sweeter.

How do you store homemade dressing?

That you keep them nice and cool in the fridge, you just need to be sure. While I did make this as a dressing, keep in mind that, it would also be great as a dip, too.

Just keep it in an airtight container and cut up some fresh vegetables to dip in it when you serve if you do decide to use this as a dip.

Also, make sure that after everyone is done dipping if you do dip into the dressing,, you store it in a fresh container so that it’s ready to go the next time. For as long as possible, this will help to keep it as fresh as possible.

Ingredients

  • ½ cup avocado oil
  • ¼ cup white wine vinegar
  • ¼ cup gorgonzola cheese
  • 2 tablespoon water
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Until it gets smooth, blend all ingredients.
  2. For up to a week, store in an airtight container in the fridge.

Thickness: In the fridge, this will thicken up. For a few seconds in the microwave, you can warm it or stir in a tablespoon of warm water.
