These handcrafted soft, fluffy, sugar-free keto donuts filled with a sweet, zero-carb jelly will make your morning better than ever. To make the ultimate low carb jelly donut, I had to combine my basic donut recipe with the jam that I had made from my keto danish recipe to produce the ideal bakery-style pastry jelly.

In order to achieve the ideal cake donut texture, this donut recipe begins with a gluten-free pastry batter made from almond flour and a few additional ingredients.

The keto doughnuts are stuffed with a goopy sugar-free lemon jam that will burst in your mouth when you bite into the donut after it has been fried to a crispy golden brown.

Ingredients

  • two cups of almond flour
  • Protein powder without flavour, half a cup
  • 2 teaspoons monkfruit sweetener
  • 1.5 tablespoons of baking powder
  • two teaspoons of xanthan gum
  • 14 teaspoon salt
  • half a cup of melted unsalted butter
  • 1/8 cup sour cream
  • For frying, use one egg and fat.

Components of the Filling

  • Boiling water in a half-cup
  • two and a half tablespoons of sugar substitute
  • 0.5 teaspoons of powdered konjac
  • Lemon juice, half a teaspoon
  • A filling injector, 1/4 teaspoon flavour extract

Directions

  • STEP 1 Combine the dry ingredients.
  1. Xanthan gum, baking powder, protein powder, sweetener, and almond flour should be combined in a large basin.

Fry

 

  1. A small non-stick skillet can be used to cook with lard or avocado oil. Fill the donut roughly halfway with lard or oil. In the skillet, add a few doughnuts and cook them till golden brown on each side (about 2-3 minutes per side). The donuts will cook more evenly if you swirl the oil in the pan. Take out and cool on a platter lined with paper towels.

  1. Combine the powdered sugar-free sweetener with the konjac gum powder. Once the mixture is boiling, pour it in. To prevent clumping, combine right away. Food colouring and flavour extract for lemon juice are added. To blend, stir. As the mixture cools, it will continue to thicken.

  1. Fill an injector tip-equipped piping bag with jelly before injecting it into the middle of each donut.
