KETO SHRIMP & AVOCADO CAESAR SALAD

You’re in for a treat because this KETO SHRIMP & AVOCADO CAESAR SALAD is amazingly delicious and is a great side dish or a dinner recipe. Wide range of flavors and a great texture.

 

INGREDIENTS

Ceasar Salad

  • ▢2 heads iceberg lettuce
  • ▢2 medium tomatoes
  • ▢1 avocado
  • ▢1 cucumber
  • ▢12 shrimps
  • ▢2 cloves garlic
  • ▢¼ tsp black pepper
  • ▢¼ tsp salt
  • ▢8 slices bacon

Caesar Dressing

(This makes ¾ cup of dressing. For the entire salad, you will need ½ cup.

  • ▢1 egg yolk
  • ▢2 tsp dijon mustard
  • ▢2 cloves garlic cloves
  • ▢1 tbsp anchovy paste
  • ▢2 tsp black pepper
  • ▢1 tbsp oregano
  • ▢½ cup avocado oil
  • ▢2 tbsp lemon juice
  • ▢½ cup parmesan cheese

INSTRUCTIONS

Ceasar Dressing

  1. Except the avocado oil add all of the ingredients in a food processor. Until all nicely blended together pulse for One minute. In a slow stream add the olive oil while pulsing. To add liquid, food processors usually have a small hole on the cover. Until all of the oil is added, pulse. This will thicken the salad dressing.
  2. *to the food processor, you can add ½ cup of the parmigiano reggiano, if you eat cheese, and mix 30 seconds more.

Ceasar Salad

  1. On medium heat, in a frying pan(large), cook the bacon slices until it gets nice and crispy. To absorb the excess oil, set aside on some kitchen paper. We will use it to cook the shrimps, do not discard the bacon fat.
  2. Peel the shrimps. Mince the garlic.
  3. To the bacon fat, add the minced garlic and shrimps. Sprinkle the pepper and salt over. Until the shrimps are a nice orange colour, cook for 2-3 minutes. Put it aside.
  4. Into tiny bits, chop the bacon slices. Dice the cucumber and tomato. Into big pieces, slice the avocado and chop the lettuce.
  5. In an bowl(extra large), add the chopped lettuce leaves and cover with the cucumber, bacon, avocado, tomato, and shrimp.
  6. Over the entire salad, spoon ½ cup of caesar dressing.
  7. Toss well and enjoy 🙂
