Ingredients

  • 1 lb large shrimp peeled and deveined, tail off
  • 1 large avocado
  • ONE English cucumber
  • 1 tbsp Taco seasoning
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 lime squeezed
  • salt and pepper to taste

Instructions

  1. (see how to defrost shrimp quickly)Thaw it under cold running water if shrimp is frozen.
  2. In a frying pan(non-stick), heat the oil. Add Taco seasoning, garlic, and shrimp and stir until it gets combined. For THREE minutes, cook, stirring occasionally, or until the shrimp is cooked through. Add salt and pepper. Take the cooked shrimp away from the heat.
  3. In half, cut the avocado, remove the pit and in a bowl, scoop out the avocado. To the avocado, add lime juice and with a fork, mash the avocado. Add salt and pepper.
  4. Slice the English cucumber and on a plate, put slices. With mashed avocado, top each cucumber slice and add shrimp on top.

Notes
