INGREDIENTS

SHRIMP:

  • 2 tbsp Olive oil
  • 1 lb Large shrimp (peeled and deveined)
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

SAUCE:

  • 1 tbsp Olive oil
  • 4 cloves Garlic (minced)
  • 1 medium Shallot (minced)
  • 1/4 cup Chicken bone broth
  • 1/4 cup Butter
  • 2 tbsp Lemon juice
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

ASSEMBLY:

  • 1 lb Zucchini (spiralized; ~approximately 3 zucchini)
  • 1/4 cup Parsley (chopped)

INSTRUCTIONS

  1. In a colander, place the zucchini noodles over the sink and toss with salt. For Twenty minutes, let them sit. The salt will bring out the water.
  2. In a saute pan(large), heat Two tbsp. (29 ml) of oil over medium-high heat.
  3. Add the shrimp. Season with salt and pepper. Arrange in a single layer. Without moving, saute for 2-3 minutes, until the bottom starts to brown and edges start to turn opaque. Flip and saute for 1-3 more minutes, untilit gets cooked through. Take shrimp out from pan, cover to keep warm, and put it aside.
  4. To the pan, add another tbsp. (14 ml) of oil. Put shallots and minced garlic in the pan. Saute for about 2-3 minutes, until it gets browned.
  5. To deglaze, add broth and scrape the bottom. Until the liquid volume reduces by half, simmer for 2-3 minutes.
  6. Stir in butter and lemon juice. Bring to a simmer, after butter melts, and simmer for 3-4 more minutes, until volume is reduced, stirring occasionally and scraping the bottom of the pan. Season with salt and pepper. Stir in fresh parsley.
  7. Squeeze the zoodles gently to release some additional water, once the zucchini seems softened and watery – don’t try to squeeze hard every last drop(they can get mushy). To the pan, add the zucchini noodles. Just until hot, cook for 2-3 minutes.
  8. Into the pan, stir the shrimp back.
