Normally I just make a salad to go with them when I make this easy stuffed peppers recipe for dinner. However I just stick with the stuffed peppers when I am making them for lunch.

Ingredients

  • 2 cups canned tuna
  • 6 tablespoons mayonnaise
  • 1/2 cup celery 1 stalk diced
  • 1 medium avocado
  • 3 bell peppers
  • 12 slices provolone cheese

Instructions

  1. Stir together the tuna, mayonnaise, and celery in a medium mixing bowl.
  2. Dice the avocado and gently into the tuna mixture, stir it.
  3. In half, cut your pepper and remove the seeds and stem.
  4. Onto a sheet pan, place the peppers with the cut side up.
  5. With the tuna mixture, stuff the peppers.
  6. With two slices of cheese, top each pepper half.
  7. Under your broiler, place the peppers until the cheese is golden brown.
