  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened almond milk (or any non-dairy milk)

For the filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered erythritol (or any keto-friendly sweetener of your choice)
  • 1/2 teaspoon vanilla extract
  • 4 ounces cream cheese, softened

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, powdered erythritol, baking powder, and salt until well combined.
  3. Add the melted coconut oil, eggs, vanilla extract, and almond milk to the dry ingredients. Mix until a thick and smooth batter forms.
  4. Drop spoonfuls of the batter onto the prepared baking sheet, forming 2-inch rounds. Make sure to leave enough space between them as they will spread slightly.
