Keto Whoopie Pie Recipe:

For the cookies:

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol (or any keto-friendly sweetener of your choice)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened almond milk (or any non-dairy milk)

For the filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered erythritol (or any keto-friendly sweetener of your choice)
  • 1/2 teaspoon vanilla extract
  • 4 ounces cream cheese, softened

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, powdered erythritol, baking powder, and salt until well combined.
  3. Add the melted coconut oil, eggs, vanilla extract, and almond milk to the dry ingredients. Mix until a thick and smooth batter forms.
  4. Drop spoonfuls of the batter onto the prepared baking sheet, forming 2-inch rounds. Make sure to leave enough space between them as they will spread slightly.
  5. Bake the cookies for about 12-15 minutes or until they are firm to the touch. Remove from the oven and let them cool completely on a wire rack.
  6. In a separate bowl, combine the softened butter, powdered erythritol, vanilla extract, and cream cheese. Beat with an electric mixer until the filling is smooth and fluffy.
  7. Once the cookies are cooled, spread a generous amount of the filling onto the flat side of one cookie and top it with another cookie, flat side down, to create a sandwich.
  8. Repeat the process with the remaining cookies and filling until all the whoopie pies are assembled.
  9. Refrigerate the whoopie pies for at least 30 minutes to allow the filling to set.
  10. Serve chilled and enjoy!
