 1 ounce finely ground pork rinds
 1 egg
 ½ cup blanched, finely ground almond flour
 ½ cup shredded cheddar cheese
 ¼ cup grated Parmesan cheese
 1 pound ground chicken thigh

Set the oven to 375° F. Using parchment paper, line two baking pans.

Combine the chicken, Parmesan, and cheddar cheeses in a sizable bowl.

Form a chicken nugget shape out of 2 tablespoons of the mixture that is round, thick, and about 1/2 inch high.

On one of the baking sheets, arrange the nuggets, and freeze them for 20 minutes.

The almond flour should be put in a medium bowl. Whisk the egg in a separate medium basin. The pork rinds should be placed in another medium bowl.

Take the nuggets out of the freezer, then dip one into the beaten egg. Press it into the almond flour after shaking off the extra. It is coated evenly with crushed pig rinds after being dipped once more in the egg.
