Because, like, ESPECIALLY when it’s TOTALLY GUILT FREE and suitable for anyone on a Keto Diet, who doesn’t like a simple, honest chocolate cookie? Come to mama!

As a starting point for this recipe, I used my low carb keto chocolate chip cookies – they also have an almond flour base.
This time, I made them quite large because I wanted my cookies to be thick and soft.

INGREDIENTS

▢1 cup / 100g almond flour NOT super-fine**.
▢½ tsp baking powder
▢3 tbsp / 21g cocoa powder
▢4 tbsp / 48g granulated erythritol
▢4 tbsp / 60g butter softened
▢1 egg medium
▢(minimum 85% cocoa solids (I used 90%))¼ cup / 30g sugar free chocolate chips/chopped dark chocolate,

INSTRUCTIONS

  1. To 175 Celsius / 350 Fahrenheit, preheat the oven (conventional oven).
  2. In a bowl, mix the dry ingredients – almond flour, granulated erythritol, cocoa powder and baking powder.
  3. Add the softened butter and the egg and until you have a smooth dough, mix with a fork .
  4. Keeping a few back to put on top of the cookies, add the chocolate chips and mix.
  5. Form NINE cookies and on a baking sheet lined with parchment paper, place . So shape them into the form you want them to have as they will spread a little, but not much .
  6. For circa, bake TWELVE minutes. Before handling, let cool COMPLETELY

NOTES

When hot, the cookies are very fragile . Once cooled, they firm up .
Reduce the baking time to 10 minutes for a fudgier cookie. Flatten and bake for up to 14 minutes for a crispy cookie.
For some extra WOW, add a pinch of salt .
**Reduce the amount to ¾ cup / 75g if using super-fine almond flour.
