INGREDIENTS:

  • 1.5 cups of dates (Medjool)
  • A cup of cashews (roasted)
  • Powder of vanilla bean, 1/4 tsp
  • One-fourth tsp of salt
  • Almonds, 3/4 cup
  • A quarter cup of dehydrated coconut

TOPPINGS (OPTIONAL):

  • A tablespoon of almond flour
  • Coconut (desiccated), One tbsp

INGREDIENT NOTES:

NUTS:
The addition of nuts makes these balls super healthy for you. Nuts contain good fats (omega-3 fatty acids). This recipe uses almonds & cashews (roasted). You may use your preferred nuts, like hazelnuts, pecans, or walnuts.

DATES:
Use the dates of your choice. They will add natural sweetness & energy to your balls. We are using medical dates here after removing the stones. The dates also act as a binding agent to make the balls.

COCONUT:
Shred the coconut to use. Be careful that shreds are smaller so it will be easy for you to pack them into balls. Save some for topping if you want.

Powder of Vanilla Bean:
It is not a mandatory item. If you can’t get the powder of vanilla beans, then use the essence of vanilla. It will add an amazing fragrance.

TOPPINGS:
Roll your balls in the small-sized shredded coconut for its flavor. You may also roll the balls in the fine powder of almond that keeps the balls from sticking.

INSTRUCTIONS:

  1. Place the food processor near the socket on the counter & plug it in.
  2. Open the lid of its jug & include the nuts, coconut, and powder of vanilla bean.
  3. Close the lid & fit the jug on the machine.
  4. Process to make a fine powder.
  5. Next, include the dates & blend again.
  6. You will have the ideal mixture.
  7. Take around 1.5 tbsp of the mixture in your oiled hands.
  8. Press & roll between your palms to make the smooth balls.
  9. Roll these balls into the desiccated coconut & almond flour.
  10. This way your ball will have extra flavor with a non-sticky texture.

TIPS:

If you find the mixture too dry, then include extra dates. If you got the mixture too sticky, then include more desiccated coconut.

Never overblend the nuts. Otherwise, they start releasing their oil, & you get the nut butter.

Use the toasted version of the nuts you choose. Buy the toasted ones from the shop if you are short on time for toasting them. We recommend toasting the nuts by yourself. The fresh toasting will give you comparatively better results.

STORAGE INFORMATION:

FRIDGE:
Place the balls in the resealable container. Consume them for around 7/8 days while keeping them in the fridge.

FREEZER:
Pack the balls in the bag or container appropriate for freezing. Freeze them for 90/100 days.
Defrost them in the fridge/over the counter before eating/serving.
